I was debating which Healthy Eats Friday recipe to post today. I guess it's a good sign when I have more than 1 healthy recipe to choose to post. I'm so proud of my husband and I for our efforts in changing our eating. Other than being hungry ALL THE TIME from the amount of exercise, I feel really great limiting the amount of junk I put into my body. Don't get me wrong, I'm not super strict. Part of exercise it the ability to enjoy some of the sweeter things in life.
I have a love of ice cream. Since I've cut out buying ice cream at the store, I wanted to find a healthy alternative. The 'pin' I found is pretty darn good. I prefer it cold like frozen yogurt but the original pinner did keep it in the fridge for a pudding consistency.
For those of you who gave up chocolate for lent...sorry. This does call for a bit of cocoa powder.
Pinterest Inspiration:
My Results:
6 ounces nonfat plain Greek Yogurt2 tablespoons of unsweetened baking cocoa
Stevia or Truvia to taste
1. Add all ingredients to a bowl.
2. Stir until smooth.
3. Put into the freezer for 30-45 minutes or longer.
4. Garnish with berries or eat plain.

This looks yummy and so easy to make! I gave up sweets for Lent but not yogurt!! I have all the ingredients so I will definitely be making this!
