Buffalo Chicken Bread

For the most part, my husband and I are making a VERY conscious effort to eat healthy.  Friday night though, I decided to make us a not-so healthy dinner with a large side of salad.  This bread was so easy to make and will now be my go to dish when I need to bring a side.  
 This would be an awesome bread to bring to a Super Bowl Party as it travels very well.
 
My husband and I had a difficult time limiting ourselves to one piece but did it.  Two nights later, we heated up the bread and it was just as good as the first night.  
 
If you want to find ways to make it less unhealthy, trying using low fat dressing and cheese.

2 boneless chicken breasts
1 tsp. olive oil
1 pizza dough (I used the Pillsbury pizza dough)
8 oz. of shredded mozzarella cheese (I used part skim)
3 oz. of shredded cheddar cheese
1/2 cup of Franks Wing Sauce
1/3 cup of ranch or blue cheese dressing (I used low fat)
 
1.  Preheat oven to 400°F.
 
2. While oven is heating, heat up a teaspoon of olive oil in a pan.
 
3. Cut chicken into cubes. 
 
4. Season with salt and pepper.  
 
5. Add chicken to pan when hot and cook completely.
 
 
6. Once cooked, add 1/4 cup of wing sauce and stir to coat chicken.
 
 
7. Let simmer for a minute or two then take chicken off of heat and cool.
 
8.When you're ready to build the bread, roll out the pizza dough into a long rectangular shape.
 
 
9. Layout the chicken. 
 
10. Spread the dressing and remaining 1/4 cup of wing sauce across the dough.  Add more wing sauce if you want it spicier.
 
 
 
11. Top with the cheeses.
 
12. Fold the ends in then roll the dough like a pumpkin roll. 


13. Spray baking sheet with light coat of non-stick cooking spray before placing bread roll on the pan.

14. Bake for 25 to 30 minutes. Let stand before cutting.

15. Serve with a side of dressing or a salad!
