Maple Dijon Chicken

Any recipe that says it's 'man pleasing' is a recipe I'm gonna try :)  After reading some of the ingredients: maple syrup, Dijon mustard, I was hooked.  I would have never paired these two items together but I have to say, they worked really well.  I cooked this meal for a group of people many I knew didn't favor chicken thighs (dark meat) so I switched it to boneless chicken breasts.  Although the dish still turned out well, I'm going to try the chicken thighs next time for my husband and I to see if there's a huge difference.  I have to say that everyone loved the meal and it was great to cook for a crowd or if you're taking a meal to someone.  Now only if my husband could find a 'woman pleasing' recipe, we'd be set!

Chicken thighs- 1 package (I used boneless chicken breasts)
Dijon mustard- 1/2 cup
Maple syrup- 1/4 cup
Rice wine vinegar- 1 tablespoon
Fresh rosemary

1. Preheat oven to 450.

2. Mix together 1/2 cup of Dijon mustard, 1/4 cup of maple syrup and 1 tbsp of rice wine vinegar.

3. Put a 1.5lb package of chicken thighs or chicken breasts (I halved them) into a foil lined, oven proof baking dish.

4. Salt and pepper the breasts.

5.  Pour the maple mustard mixture over the chicken, turning the meat in the mixture so it's fully coated.

6.  Place the dish into the preheated oven and let it bake for 40 minutes or until the meat thermometer reads 165. I'd recommend a thermometer instead of cutting open the chicken and loosing the juices.

7. Baste the tops of the chicken with more sauce halfway through.

8. Let the chicken rest for 5 minutes before serving. 

9. Plate the chicken, top with sauce and fresh rosemary.
