Mango Salsa Pork

I have to say this recipe is a keeper.  My husband said multiple times last night that it was the best pork I've ever cooked.  Let's put this into perspective...we've been together almost 11 years and married almost 7 years.  In all those years, this was the best pork I've ever cooked ?!? Well, I have to admit that it was.  The pork was a little spicy but the mango salsa balanced it out really well.  Instead of using the pork tenderloin like the inspiration recommended, I used thick bone-in pork chops and cooked it on the grill instead of in the oven.  I really enjoyed the smokiness of the grilled pork along side the cool mango salsa.  Need I say more??  Awesome 'pin'!

Pork
1 tsp garlic salt
1/2 tsp ground ginger
1 lb pork tenderloin (I used bone-in pork chops)
1/4 cup Sweet Red Chili Sauce

1 tbsp honey
1/2 tsp Sriracha sauce


Salsa

1 large ripe mango, peeled, seeded and coarsely chopped
1-2 tbsp chopped fresh cilantro
1 small clove garlic, minced
1 tbsp minced jalepeño, seeds removed and diced
2 tbsp fresh lime juice  


1. For the salsa, combine all the ingredients in a bowl, season to taste with salt and pepper and refridgerate.


2.  Preheat grill.

3. Mix garlic salt and ginger in small bowl.  

4. Rub evenly over pork.


5. Place pork on the preheated grill.

6. Grill pork for about 6-8 minutes per side or until the internal temperature is between 145° and 160° with a meat thermometer. 

7. While the pork chops are cooking, mix the chili sauce, honey and sriracha in small bowl (for spicier chops add more sriracha sauce).

8. Brush the sauce over pork during the last 5 minutes of cooking.


9. Remove pork chops from grill and top with mango salsa.
