Breakfast for Dinner??

My girls and I could live off of breakfast foods.  There's nothing better than a huge bowl of cereal as a nighttime snack, warm muffins from the oven or waffles right off the iron.  Nights my husband works last, it never fails that we will have 'breakfast for dinner' dinners.  The girls love the fact they are eating breakfast at night and I love it because I know there will be no fights about finishing dinner.  Thursday night my husband worked late and my 3.5 year old requested waffles as the 'breakfast for dinner' meal.  Feeling more creative than usual, I started to experiment with my waffle 'pin'.  What started out as pink waffles turned into Funfetti waffles that were sweet and fun to cut into.  These would make for an awesome dessert with a scoop of vanilla ice cream, sprinkles and whipped cream.

3/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup whole milk or buttermilk (or a combination)
1/3 cup vegetable oil or melted butter
1 egg
1 1/2 teaspoons sugar
3/4 teaspoon vanilla extract


1. In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. (This was my first time using cornstarch in a waffle recipe).

2. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. 

3a. Let the batter sit for 30 minutes. (At this point, I started to set the table, cut fruit, gather the girls and before I knew it, 30 minutes was up.)

3b. OPTIONAL- if you want to color your waffles, put the food coloring in now and gently blend in.  We went with pink.

4. Preheat a waffle iron. Do not use non-stick spray on the waffle iron. There's enough oil in the batter for the waffles to release.

5. Once batter is poured onto the iron, spoon or shake on your choice of sprinkles.  I didn't have jimmies so I used the round ball sprinkles and they worked well.

6. Remove the waffle once finished and embellish with butter, sprinkles and whipped cream if it's a special day (or night).
